• Meat from a Cooked Rotisserie Chicken, 1-1/2 inch pieces
  • 1 Medium Red Onion, diced
  • 1 Large White Onion, diced
  • 1 Large Carrot, peeled & sliced
  • 1 T. Minced Garlic
  • 1 tsp. Hot Sauce
  • 2 T. Tomato Paste
  • 1 tsp. Cumin
  • 1 tsp. Basil
  • 1 tsp. Coarse Salt
  • 1/2 tsp. Pepper
  • 14 oz. Diced Tomatoes
  • 1 lb. Raw Shrimp, peeled & deveined
  • 2 c. Cooked Rice, optional

  1. Combine all ingredients EXCEPT shrimp and rice in slow cooker.
  2. Cover. Cook on Low 4 hours.
  3. Add shrimp and stir.
  4. Cover. Cook on High for an additional 15 minutes.
  5. Serve over hot, freshly cooked rice.
