Slow Cooker Dads Famous NO Bean Chili

Ingredients

1 1/2 med. onions
1 med. green pepper
1 stalk celery, chopped
1 minced fresh garlic clove
1/2 tsp. jalapeno, fresh, chopped
3 T vegetable oil
4 lb. ground beef (lean beef is okay)
8 T chili powder
1 T ground cumin
2 tsp. garlic salt
1/4 tsp. hot sauce
salt & pepper
6 oz. beer
1 1/4 c. water
14.5 oz. stewed tomatoes, undrained
8 oz. tomato sauce
6 oz. tomato paste
4 oz. diced green chilies
1 bay leaf



This is my dad’s “famous” chili. (okay well maybe it’s only famous in our family but don’t tell him that!) He says that real chili doesn’t have beans so he came up with this concoction to prove to us that bean-less chili is delicious!

  1. Chop the onions, peppers, celery stalk, jalapeno, and mince the garlic clove.
  2. Heat the vegetable oil on med-high heat and saute the onions, peppers, celery stalk, jalapeno, and garlic until they are soft and onions are translucent.
  3. Add the beef and continue cooking until the beef is no longer pink, adding salt and pepper to taste.
  4. When finished cooking, spoon away any excess oil from beef mixture and transfer the beef mixture to a 6-Quart slow cooker.
  5. In a separate bowl, mix the chili powder, cumin, garlic salt, hot sauce, salt and pepper, and the beer. Let it sit for a few minutes then add the chili powder mixture to the beef mixture in the slow cooker.
  6. Next add the water, stewed tomatoes, tomato sauce, tomato paste, diced green chilies, and bay leaf to the slow cooker.
  7. Mix well then cover and cook on low for 3-4 hours, stirring occasionally.
  8. To serve, dish into bowls and top with shredded cheese, onions and you can also add a dollop of sour cream if desired.

I have a recipe handed down from my mil and her son (whom I married) is the pickiest man; ever! and we have a NO bean Chili that is excellent as well!! 🙂 But it is a lot different then this and less put in it! No onions, no seasoning and plain everything! But very good!!!

Made this on Sunday and didn’t change a thing! Full of flavor and perfect for the hubs who tries to eat a paleo diet. Loved that it made alot because it’ll freeze well. Nom Nom Nom!

Tried this today. We like a little less heat, so did 6T of chili powder instead of 8T. We also like a little more tomato than most, so added an additional can of diced tomatoes (I used the ones with onion and garlic) and it turned out fantastic! I’ve always made chile with beans as that’s my preference, but hubby prefers no beans and this is the first “no-bean” recipe that we’ve liked! Thanks!!

If I wanted to leave out the 6 oz. of beer what would you recommend in place of that … additional water, maybe some beef broth??

My boyfriend doesn’t like beans so this sounds perfect for him! I’m cutting the recipe in half and was wondering if the amount of cooking time would still be 3 1/2 hours?

WEW…Sounds HOT, good but HOT! 8 TBSP chili powder? If it were not for the crock pot we might starve! LOL I have 2 going right now. The only way to cook!!

This Recipe is excellent! I used 99% fat free turkey meat and it stil tastes delicious! I have never used beer in my chili before and I think it added the perfect sweetness! Thanks for the recipe!
