Slow Cooker Chicken Lo Mein

Ingredients

2 T. butter
20 oz. package boneless skinless chicken thighs, cut into bite-sized pieces
1 c. stir-fry seasoning sauce
5 oz. can sliced water chestnuts, drained
1 medium onion, sliced
16 oz. package fresh stir-fry vegetables (celery, carrots, broccoli and pea pods)
1/2 c. whole cashews, if desired
8 oz. package lo mein noodles
Optional: 1 tsp. ginger paste


  1. Melt butter in skillet until sizzling; add chicken pieces. Brown over medium-high heat, stirring occasionally, until chicken is browned (5 to 7 minutes).
  2. Place in slow cooker. Add stir-fry seasoning sauce, water chestnuts and onion.
  3. Cover. Cook for 4 to 6 hours on Low.
  4. Increase heat to High 30 minutes before serving. Add stir-fry vegetables; stir.
  5. Cover. Cook for the additional 30 minutes, or until vegetables are crisply tender.
  6. Optional: Stir in cashews just before serving, if desired.
  7. Meanwhile, cook lo mein noodles according to package directions.

Options: Add 1 tsp. ginger paste when adding the vegetables.

Serve: Spoon stir-fry chicken and vegetable mixture over noodles.

for the crockpot chicken lo mein recipe, for the 1 cup of stir fry seasoning sauce is it the dry seasoning or stir fry sauce in a bottle?

Since you deleted my previous question, I’ll ask again. Should you cook the chicken before putting it in the crock pot? I believe this defeats the purpose of slow cooking and may dry the chicken out. What would work best?

OMG..I’ve never read such rude comments from people (Julie)… not to mention how many people can’t just read the recipe and try it..without that same ole…do I cook the chicken first… question!!!!! If it says to cook it…cook it!! If it doesn’t…..DON’T! If it says add water…do it…if it doesn’t…. I’ll let you figure it out from here…

Yummy! I added fresh vegetables with the chicken and made my own stir fry seasoning sauce. Awesome recipe. My whole family (ages 4-33) enjoyed this meal.

Hi! At my local grocery store, even in the Asian section, I do not see lo mein noodles. Is there some other kind of noodle I could substitute for? I have been hunting for them and can’t seem to find them anywhere. Thanks!!

Just to clarify, once the vegetables are in you only cook for a half hour right (stirring once during that half hour? Not, cook 1/2 hour then stir then cook another 1/2 hour?

At what point do I add the ginger paste? Does it go in the noodles or in the crock pot with the stir fry? I am sorry it just seemed a bit unclear and I have never made an Asian meal before. Thank you!
