**Slow Cooker Balsamic Chicken

Slow Cooker Balsamic Chicken

  • Cooking Time:

    4-5 hours
  • Servings:

    10-12

Ingredients

4 lb. chicken thighs (skin)
2 c. light brown sugar
1/2 c. sprite (coke)
4 T. crushed garlic (fresh)
2/3 c. red wine vinegar
2/3 c. balsamic vinegar
black pepper
4 T. light soy sauce
couscous or rice of your choice, cooked
  1. Place all ingredients except couscous/rice in a slow cooker. (Optional: Add cherry tomatoes!)
  2. Cover. Cook on Low 4-5 hours.
  3. Remove chicken from Crock and if desired, remove the bones and skin. (I have use boneless/skinless chicken breasts for this recipe – just be sure not to overcook!)
  4. Place the couscous/rice in a bowl and then top with the boneless/skinless Balsamic Chicken and some liquid from the slow cooker and sprinkle with feta cheese.

This recipe was awesome and my 7 yr old have it a thumbs up! I especially loved how easy it was to make. Definitely better with chicken thighs vs.breasts.

Extremely high in calorie and carb mainly due to the soda and brown sugar i’m sure… Have you tried diet soda and a substitute for the brown sugar? Or less brown sugar? This sounds amazing to me but i’m diabetic and this will send me over the top LOL 😉

What is the serving size for this recipe? I used a kitchen conversion calculator app to find out what 480g would be equivalent to and it looks like it’s about 1 pound. No one in my family eats 1 lb. of chicken in one sitting so if we cut the serving size down then the nutritional values would look much different. You may want to consider changing the serving size that your nutritional calculator uses to make this recipe even more appealing.
