Slow Cooker EASY Cheesy Chicken, Broccoli and Rice

Ingredients

3 c. brown rice, uncooked
6 c. water
2- 10 3/4 oz. Broccoli Cheese Soup, 98% Fat Free
4-6 chicken breasts, boneless, skinless, frozen
16 oz. broccoli, frozen
Pepper to taste and/or your favorite low-sodium seasonings
1 c. shredded Cheddar Cheese

This recipe for Slow Cooker EASY Cheesy Chicken, Broccoli and Rice really is EASY. Just put everything in the crock, set your timer and forget it until it’s time to eat!

  1. Stir uncooked brown or white rice, water, broccoli & one can of soup together in the slow cooker.
  2. Place frozen chicken breasts on top. (note: If your chicken is thawed, reduce crocking time by 1 hr.)
  3. Pour second can of soup over chicken breasts and sprinkle with seasonings.
  4. Cover. Cook on Low for 8 hours.

OPTIONAL: You can cut the chicken breasts in bit size pieces when serving! I do this for my little one!

Serve with Chicken breasts over the rice and broccoli. Top with a few sprinkles of Cheddar Cheese.

But Could I cook it in the oven? If so what degree & how long?
My Crock Pot just died. 🙁

I saw the note about using thawed chicken and reducing the time by an hour, but do you think you can dice the raw chicken? Or will the smaller pieces make for a drier chicken?

What kind of rice should you use? I made it with brown min rice today and it seemed to turn out a little mushy. It tasted great and will make it again just wanted to confirm the rice:)

If you use 3 cups of uncooked brown rice won’t that make an awful lot of rice? I know that 1 cup of uncooked white rice makes 3 cups of cooked rice, because rice triples when it cooks. Do you end up with 9 cups of rice? I see it serves 8 but that still seems like a lot of rice.

If I have the instant brown rice should I use that or do I need to use regular brown rice?

I used regular brown rice. After cooking all day the crockpot was still full of water and the rice was uncooked. Took it out of crockpot and finished cooking on the stove. It made a lot of rice. I don’t think I would make this again.

I used a 7 qt crockpot and followed the directions exactly as written. I just got home to find the entire 7 qt insert full to the top with more rice than our family of four can eat even if we had it every night of the week and the rice was a big gloopy mess (very starchy with an oatmeal consistency and it actually looks like oatmeal too). Going to make this for tonight and I know I won’t get he answer in time, so I many just post my findings, if you haven’t done this. Have you ever used fresh broccoli in this recipe. I have some that needs to be used so we will see 🙂 Wish me luck! Thanks for the yummy looking recipe!

I just made this and it wasn’t bad, but I too found it to be pretty bland. I used a little Mrs. Dash and some pepper, but it just didn’t have much taste. Not sure if it cooked too long. I will eat the leftovers, however, there is SO much rice left!

I made this for dinner tonight and I wish I’d read these comments beforehand!! Oops :/. I used white rice & you should definitely reduce the number of cups you put in if using white! It made way too much rice vs. everything else and its mushy, too. So I should’ve waited til closer to the end to add it. Oh well! It does taste great and now I know what not to do for next time! Will definitely be trying this recipe again! Thanks!!

Do you only sprinkle with the cheese after its cooked or can you make it cheesy rice by adding the cheese before hand?

I noticed it says to use boneless skinless chicken breast. I have bone-in chicken breast that I would like to skin and use instead. Would that still work? Does the cooking time change at all?

Darn! I wish I had seen this earlier. I already have salsa chicken in the crock pot. I’m making this on Wed. I am going to use a wild rice blend that I get from our bulk section of the grocery store and add some mushrooms. I made the mistake of buying a HUGE package from Costco (what was I thinking?) so I need to use them up. Howdy! I am enjoying a wee bit of rain in CA and I am looking forward to this dish. Question – I am having a bit of trouble finding broccoli cheese soup. Can you recommend a brand or can I use cream of broccoli and supplement with cheese? I also got quick cooking brown rice – will the time need to be adjusted? I probably won’t have a response before cooking, however, I plan on using chicken cubes. I’ll add the white rice 2 hours later. My crock runs very high so I plan on cooking only 4-5 hours. Are cubes ok?
