Slow Cooker Ham and Egg Casserole

Ingredients

32 oz. frozen hash browns
1 lb. cooked lean ham, cubed
1 onion, diced
1 green bell pepper, diced (optional)
1 1/2 c. shredded cheese
12 eggs
1 c. skim milk
1 tsp. salt
1 tsp. black pepper

Slow Cooker Ham and Egg Casserole is an easy meal to prep and put in the crock at night.  Then let it cook away while you sleep and wake up to a fresh cooked breakfast in the morning!

  1. Coat a slow cooker well with non-stick baking spray or cooking oil.
  2. Make 2-3 layers with each of the ingredients (potatoes, ham, veggies and cheese) in the crock in the following order: hash brown potatoes, ham, onions, peppers (if using) and lastly, the cheese. (Note: I have made just one layer when I didn’t need so many servings! This will reduce cooking time though.)
  3. Beat the eggs, milk, salt and pepper and pour over the layers in the crock pot.
  4. Cover. Cook on Low for 7-8 hours or overnight.
  5. Serve warm, topped with scallions or your choice of garnish.

This turned out really nicely. I made it for a bunch of co-workers. I used cubed hash browns and no onions, put it on overnight. Turned out really nice 🙂

I used frozen diced peppers and onions. It made for quick prep! I also took this for a work breakfast popluck. It made a full crockpot and was delicious. Would probably be good with sausage too!

Made this with bacon & sausage it turned out really delicious. Makes for a great fast breakfast for the holidays with relatives in, also great for Christmas morning.

Hi Jenn, I made this yesterday.. Replaced the ham with chicken sausage though cause we don’t eat ham. Brought it to the office and everyone loved it! Even my kids and my mum in law (who is so hard to please when it comes to food) loved it! Thanks for sharing this. Definitely making this again.

For the people that are wondering about omitting the potatoes, I am going to give this one a whirl using shredded turnips in place of the potatoes. I’ll let you know how it turns out!

This is probably a stupid question, but if you add bacon or sausage would you need to cook it first before you put it in the crockpot? I’m not an experienced cook, that’s why I love using the crockpot so much! Any idea how much bacon or sausage I might put in. I realize it is not in your original recipe.

Marcella, grease it up with some olive or vegetable oil. If you lack either or, rub it down with butter being sure to get a thick coat. It will also change up the nutritional value some.

Uh oh. I initially misread your post. I hope it turned out ok without the lube on the crock. My guess is, it likely stuck quite a bit and was hard to remove. I’m sure it was still delicious though, even if not so pretty. ^_~.

Hi All
One of my daughters is a nurse and has to work a 12 hour shift tonight (Christmas Eve). She works until 7 a.m. so our dinner is now a breakfast. Can I use fresh potatoes instead of frozen?? I’m kind of in a bind. HELP!!!

Made this for our Christmas breakfast and it was a huge hit! Instead of cooking overnight (ran out of time to get stuff prepared) I cooked on high for 4 hours. I use the cooking bags for crockpots so the clean up is easier. Thank you for sharing this recipe!

Christmas morning fail! Cooked this for 7 hours on low, it was way over cooked. Not to mention the texture with the frozen shredded potatoes was just gross. Don’t waste your time or money on this one. Thank Goodness we had Cookies and junk food to fall back on!

I just prepared this and can’t wait till morning. I had a little difficulty getting the ingredients to stick to the wall of the pot. I used a little egg. It seemed to help. Any suggestions on how to make each layer stick better? Thank-You !

I don’t know if my crock is too small but I ended up with 3 layers, about 4 inches tall and each layer of hash browns was mushy and gross. My “garbage disposal” kid was the only one in the family who would eat it. I wonder if, instead of doing several layers, just doing one big layer might be better. Probably won’t be trying this one again.
