Slow Cooker Pecan Pie Oatmeal

Ingredients

1 c. pecans, chopped and divided
1-1/2 c. oatmeal (use rolled oats or steel cut oats ONLY)
4-1/2 c. milk
3/4 c. dark brown sugar
1/4 c. butter, unsalted, or 1/2 stick
1 tsp. vanilla extract

My family LOVES waking up to Oatmeal, and the Slow Cooker Pecan Pie Oatmeal is no different! You can imagine the wonderful aroma you will wake up to!

  1. In a small skillet, melt the butter and toast pecans over medium to low heat. (you don’t want to burn them)
  2. Stirring frequently, watch carefully to avoid burning.
  3. Reserve 1/4 c. pecans for serving.
  4. Combine 3/4 c. pecans and remaining ingredients in the crock of a 4 quart slow cooker.
  5. Cover. Cook on Low for 7-9 hours. (My slow cooker is programmable, so I set it for 8 hours. When it is done it turns to Warm.)

NOTE: Serve with the reserved toasted pecans on top.

This sounds absolutely amazing… can you please tell me how many servings are in what you have listed above? I can’t seem to find it unless I’m overlooking it somewhere! I presume this could be doubled depending on how many people the above recipe serves?

3 words apply to this recipe…OMG!!! I could not stop ‘picking’ at it after it was cooked. It is so yummy and comforting. I switched up the recipe a bit…coconut oil instead of butter (’cause I didnt have any available), 1/2 cup of egg whites (for an extra hit of protein) and about 1.5 tsp of cinnamon (’cause whats oatmeal without cinnamon). This will certainly be on heavy rotation in our household. Thanks CPG!

So that didn’t work! My pecans got burnt in the crock pot. Not sure what I did wrong. A few got burnt in the skillet but in the crock pot it had an odor of yumminess mixed with a burnt popcorn smell. OY! Going to try again tonight 🙂

This looks so yummy! Can’t wait to try it. One question, though: is that 1 1/2c dry oats or cooked oatmeal? I’m assuming with the amount of milk called for, that it’s dry oats or steel-cut oats.

I would love to try this – and have a question that has NOT been answered – since there are only 2 of us in the household, it will make more than we can put away in one sitting – optimally, anyway. Is this something I can make and then it just needs to be nuked in the subsequent mornings?

I am looking for recipes for 1 or 2 servings. I have one of the little Dip size serving crock pots….no temperature controls, just plug it in. Do you have or do you know where I could find any recipes for this? Especially breakfast and desserts.

I made this last night put it on at 930 it was burnt to a crisp by 6. It smelled so delicious all night I’m not sure what happened? I put it in for 8 hours than my croc goes to warm. So sad 🙁

Unfortunately, this was a huge flop in my house. I cooked it on low for 7 hours and when we came down for breakfast it was also a burnt mess. Still love the concept. Will try it again some other day in a different crock to see if it helps.

So I made this and put it in the night before. I woke up to oatmeal mush. And the flavor just wasn’t as great as I had hoped I followed the directions to a T. What did I do wrong?

thats a shame that every slow cooker cooks differently. They should all be basically the same. It always seems like my crockpots cook hot. Always enjoy your recipes CPG

The first time I made this in my crock pot and it was OK – probably over cooked. The second time I used my fuzzy logic rice cooker that has a porridge setting. I let the steel cut oats soak in the milk in the fridge overnight and then added the remaining ingredients in the morning. It is the best oatmeal I’ve ever had. Thanks for posting this!
