**Slow Cooker Easy Baked Potato Soup

Slow Cooker EASY Baked Potato Soup

    7 - 9 hours

Ingredients

20 potatoes, red, cut into cubes
1/4 c. and 2 T. flour, all-purpose
1 1/2 c. bacon, real bits
2 onions, small red, chopped
2 cloves garlic, minced
1/4 c. chicken bouillon granules
2 T. ranch dressing mix
1 T. and 1 tsp. parsley, dried
1 1/4 tsp. seasoned salt, if you like saltier, you can add salt at the table.....
1 tsp. pepper, black, ground
6 c. water
2 c. half-and-half
1 c. cheese, Cheddar, shredded, or to taste
1/2 c. green onions, chopped, or to taste

Slow Cooker EASY Baked Potato Soup is not only EASY it is DELICIOUS! Takes minimal prep time to put together, so great for the working household!

  1. Place potatoes in the bottom of your slow cooker.
  2. Sprinkle flour over the potatoes, tossing potatoes to coat.
  3. Sprinkle bacon bits, red onion, garlic, chicken bouillon, ranch dressing mix, parsley, seasoned salt, and black pepper over the coated potatoes.
  4. Pour water into the crock pot.
  5. Cover. Cook on Low 7 to 9 hours.
  6. Pour half-and-half into the soup; cook another 15 minutes to warm through.

Garnish with Cheddar cheese, bacon bits, dollop of sour cream, and green onion to serve!

Tasted great but it was a little salty. Maybe 1 1/2 tsp of seasoning salt instead of 2 tsp?

Will the soup thicken the longer it cooks? It has been in the crock pot on low for 4 hours and it is really watery and potatoes aren’t soft at all:( Don’t know if I’m over reacting too early or if I messed something up.

How many servings does this recipe make? And are you sure there are 771 calories per serving? Sounds delicious but 771 is a lot!

Sounds delicious but it has way too many calories. Can you suggest what changes I could do to make it skinnier? Also dairy free? My fiancée just found out he’s allergic. Thanks a lot! Love your site.

I think the 2 cups of half and half is the killer. I would substitute it with whole milk, or canned evaporated milk, or lowfat plain yogurt. Sounds delicious and I can’t wait to make it.

I’ve been cooking for 8 hours on low and the potatoes are far from soft. Dinner for guests is in half an hour and I’m tempted to just order a pizza. Is there a fast fix??

(And is the reasoning for this because of my crockpot?)

Going to make this tomorrow. Do I peel the potatoes? FYI – Half and half doesn’t show up as an ingredient on the IPad app, it only appears in instructions so you have to come here to find out how much to add.
