Slow Cooker Pasta Primavera

Ingredients

3 c. White Pasta Sauce
10 oz. chicken breasts, skinless, boneless
10 oz. spinach, frozen
10 oz. broccoli, frozen
1 c. onions, frozen, chopped
1/2 to 1 whole red pepper, sliced thin
1 c. squash, summer, sliced, frozen
1 c. zucchini, sliced frozen
4 oz. penne pasta, uncooked or pasta of your choice
Parmesan Cheese, Shredded for top

Slow Cooker Pasta Primavera is a favorite of mine, so very excited to share with all of you! Yummy!

  1. Combine all the ingredients in the slow cooker.
  2. Cover. Cook on Low for 6-8 hours.

Optional: If you want to spice it up, add 1/8 to 1/4 tsp. red pepper flakes! Also another option would be Alfredo Sauce!

Note: Freezes well!

This looks so yummy and easy! You said grilled chicken so the chicken should be cooked before going in the crock pot? It won’t get overcooked being in the crock pot for that long? Can you do it with uncooked chicken?

Hi, do you have any recommendations for using squash, zucchini, etc that hasn’t been frozen? Would I be able to add them later in the cooking proccess?

Your recipe calls for the Healthy Choice Garlic and Herb Sauce – but when I look that up it is a red sauce and the picture doesn’t look like it has a red sauce. I always thought primavera was with a white or light sauce.

My family liked it but said the chicken was a little dry, so having small chunks of chicken would probably be better than whole breasts.

I stumbled upon this when searching for a recipe. I wanted to try a crock pot version of chicken primavera. This recipe is so versatile. I was following the can of mushroom soup recipe, but decided I wonder if you can do this in a crock pot? I used yours as a guide and just made my sauce equal to your measurements here. I used the frozen vegetables I had on hand-carrots and broccoli florets. I had chicken thighs and cut them into 1 inch cubes. I only had larger sized rigatoni pasta so threw that in. Can you use fresh veggies instead of frozen? When you say white sauce do you mean something like alfredo sauce?

Tried this out for dinner last night. Was pretty tasty and very easy, but I would definitely add the pasta and veggies in partway through next time, because everything turned to a big pile of mush. Tasty mush, but mush – my sweetie said, “so…uh…what IS this that we’re eating?” 🙂

I am going to try this, however, I am picky about my pasta having spent three years in Sicily (my husband was military), so I will cook my pasta on the stove so that I may have my pasta al dente. I love pasta primavera! Can’t wait to try this!
