Slow Cooker Pumpkin Chicken Chili

Ingredients

14 oz. tomatoes, diced
14 oz. pumpkin puree
2 c. chicken broth
1 large onion, diced
1 T. minced garlic
2 T. chili powder
1 tsp. ground cumin
1 tsp. coriander
1 tsp. Italian seasoning
1 tsp. salt
1/4 tsp. black pepper
1 - 2 chipotle peppers in adobo sauce, seeds removed and minced
1 medium red bell pepper, seeded and chopped
1 medium green bell pepper, seeded and chopped
1 lb. boneless, skinless chicken breasts
28 oz. chickpeas, rinsed and drained
1 c. corn kernels
2 T. chopped fresh cilantro
sour cream, shredded cheddar, guacamole/avocado, green onions and/or tortilla chips, for serving

There are many versions of chili recipes, you will not go wrong with this one…. Slow Cooker Pumpkin Chicken Chili! NOTE: This recipe can easily be converted to vegetarian by substituting vegetable broth for chicken broth, and omitting the chicken.

  1. Add tomatoes, chicken broth and pumpkin to a 4 or 5 quart slow cooker.
  2. Whisk pumpkin mixture until well combined.
  3. Add onion, garlic, chili powder, cumin, Italian seasoning, coriander, salt, pepper and chipotles, combine well.
  4. Add chicken, bell peppers, chickpeas and corn.
  5. Cover. Cook for 6-8 hours on Low or for 4-5 hours on High.
  6. When ready to serve, remove chicken and chop into bite-size pieces or shred with two forks or a Meatrake.
  7. Add chicken back to pot.
  8. Stir in cilantro and serve topped with sour cream, shredded cheddar, green onions, guacamole and/or tortilla chips.

Are the stats on that correct for 1 serving? 97.7 carbs? How big is a serving? It sounds so good but I can’t afford that many points on WW.

The high carb amount comes more from corn, not chick peas. Don’t add the corn and you won’t have as many carbs or sugar. I am making this tomorrow! Can’t wait!

If I precook the ground meat, do I still add it to the crock pot at the same time it says to add the chicken, or later?

I used ground chicken breast and it turned out great!! Once in the serving bowl, I added a bit of A-1 with tabasco and some salt to give it a bit of a kick. It was delicious. Will definitely be making this again!

Made this today in the crockpot and it was delish! I used shredded rotisserie chicken instead of cooking the chicken in there, and it was just as wonderful! Oh, and I added some kidney beans! Mmmmm great recipe! Love the addition of secretly healthy pumpkin!

making this now and totally didn’t read down far enough to see that you cut the chicken later. I cut it in the beginning, will this affect cooking time? I have it at high but have enough time to cook on high for 6 hr if need be. thank you for your help!

It sounds great but my husband is on Weight Watcher and a serving has 17 points. I’m assuming the info you give includes the toppings.

It says to use “14oz of tomatoes, diced”. Should I use fresh or use canned. I was going to use canned, but was not sure if I should drain them before adding, or add the liquid as well. Suggestions?

What are chipotle peppers in adobo sauce? Is this found in a can, or is this something I have to make ahead of time? Sorry for my ignorance, but I’m a military wife living overseas, so I have to use what the commissary supplies, and this doesn’t sound familiar. Thanks! About the tomatoes, is it okay to use diced tomatoes in a can, or am I suppose to use fresh? If I can use the ones in a can, do I drain the liquid or add it? This was delicious! My fiance hadn’t even finished the first bite and told me how good it was! But I was wondering like Mary, since I’m also on WW. I plugged in the recipe to the recipe builder, to try to figure out the points and servings to get it to 17 points like the label, it breaks it into 3 servings. In terms of cups, how much is 515 g?

Do you thaw the chicken before you put it in the crockpot? Also I have dry chickpeas, I’m guessing I need to prepare them before putting them into the chili?

Hi, I’fe made this for my boyfriend a couple times now and he absolutely loves it (so do I!) He even had me make it for his works thanksgiving luncheon.

I have all the ingredients to make except the garlic cloves. Would jarred minced garlic work alright? If so, how much would you suggest?
