Gluten-free Slow Cooker Rice Pudding

Ingredients

2/3 c. long grain brown rice
1 tsp. cinnamon
1/4 c. raw honey
14 oz. can coconut milk
1-2/3 c. vanilla almond milk
½ c. raisins
1 tsp. pure vanilla extract

This dessert can be described as a warm, traditional, and comforting dish.  Gluten-free Slow Cooker Rice Pudding is a dessert made often in our home with leftover rice–feel free to use any variety you have on hand!

  1. Add rice, cinnamon and honey to a slow cooker and stir.
  2. Next, add coconut and almond milks; stir.
  3. Cover and cook on LOW 3-4 hours, or until rice is tender.
  4. Turn off slow cooker and stir in vanilla and raisins.
  5. Let sit for 15 minutes before serving. (this will allow raisins to soften.)

Two Questions:
In response to a comment, you say the rice is uncooked, but in your post you mention you make this using ‘left-over’ rice which would imply the rice is cooked.
Also, with nut allergies, what can I substitute for the almond milk and do I need to increase vanilla to compensate for the difference?

Made this recipe last night as a dessert but I used jasmine rice instead. It reminds me so much of the one my mom would make me. It is so tasty with the raisins, too. Thanks for all of the great crock ideas. Getting ready to make some corn and red pepper chowder.

Used long grain brown rice 2/3 C as called for in the recipe its been cooking for 4 hrs and is very runny. Seems like a lot of liquid for such a small portion of rice.
Not happy with the way it is turning out.
