Slow Cooker Bananas Foster Bread Pudding

Ingredients

2 c. bread cubes—brioche bread works best
4 bananas, peeled and sliced (the riper the better!)
2 eggs, beaten
1 c. heavy cream or half & half
4 T butter, melted
1 c. packed brown sugar
1/8 to 1/4 c. spiced rum (depending on how much rum you would like)
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/4 c. chopped pecans or walnuts
1/4 c. shredded coconut (optional)

Normally a dessert reserved for a special night out, this Slow Cooker Bananas Foster Bread Pudding will melt you from the inside out.

  1. Grease inside of slow cooker with oil or use a slow cooker liner.  Layer bread cubes on bottom of crock.
  2. Next, layer sliced bananas on top of bread.
  3. Combine eggs, cream, butter, brown sugar, rum, vanilla and cinnamon in a small bowl; pour over bananas and bread.
  4. Cover and crock on LOW for 1.5 hours.
  5. Twist the crock inside the cooker half way around, after about 1 hour.
  6. Sprinkle top of dessert with nuts and coconut and crock an additional 30 minutes. (note: I’ve left the coconut out before at my daughter’s request and it was still delish!)

TIP: Twisting the crock inside the cooker half way through the crocking time will help your dessert from burning on one side, as most slow cookers crock hotter on one side than the other.

Serve with vanilla bean gelato, whipped cream or ice cream and top with additional nuts and bananas (optional)

I bought all the ingredients and went to the kitchen to begin assembling this dessert and then realize you never incorporated the eggs or cream in the recipe. Could you please update that? I’m assuming I’ll mix them and throw them in as Step 2.

Hi ~ Thank you for sharing this recipe! I made it tonight and it was delicious 🙂 I didn’t have enough 1/2 and 1/2, so used a can of evaporated milk + 1/4 cup of 1/2 and 1/2, and used an oatmeal brown bread (from the bakery) instead, as well as almonds instead of pecans — I used what I had on hand and it came out great! Love doing this in the crock pot. Thanx again!

I’M MAKING THIS FOR THANKSGIVING TOMORROW, hope I can get an answer very soon! If you double the recipe and use the larger crockpot, how do you know how much time to increase the cooking? Also, now I’m concerned about the bananas turning gray like the last post said! ugg.

If I were to prepare this the night before, so I can just wake up and then it on, should I keep the liquid sperate until cooking? Or do you think it might be good to let it soak all night before I plug it in? Any experience or thoughts?
