**Slow Cooker Pork Carnitas

Slow Cooker Pork Carnitas Tacos

    8-10 hours

Ingredients

1 T. chili powder, chipoltle
2 tsp. cumin, ground
2 tsp. garlic, powder
1 1/2 tsp. salt
1 tsp. onion, powder
3 lb. pork, loin roast, boneless (can use country style pork ribs too!)

Slow Cooker Pork Carnitas Tacos was shared by a dear friend of mine, Suzanne P., and she also made if for us! YUMMY!

  1. Combine all dry ingredients in a small bowl to make the rub.
  2. Coat Pork with rub and put in the slow cooker.
  3. Cover. Cook on Low for 8-10 hours or until brown and tender.
  4. Remove pork from slow cooker, remove any fat, and shred the pork with two forks.
  5. Reserve cooking liquid.
  6. Stir enough cooking liquid into the pork to moisten.

NOTE 1: Can make up to 2 days ahead of time, just cover and refrigerate.

Note 2: Top with Lettuce, Tomato, Cheese, Sour Cream and/or Guacamole!

Variation: Can make with beef or chicken as well!

I love crocking, but I’m a bit confused about reserving cooking liquid when you don’t put any in to begin with. I cannot imagine the pork making enough liquid of it’s own. Any thoughts?

Kim, It doesn’t matter what type of meat you’re cooking in your crock, there’s liquid even when you don’t add any. It’s from the condensation that developes on the lid and drops down.

Would it be ok to just use regular chili powder or does it have to be chipotle chili powder? I only have regular on hand. 🙂

I just made this today for dinner. The smell alone was mouth watering. I loved the rub!!! We are going to serve this with corn tortilla, re-fried beans, lettuce, sour cream, guacamole and cheese. Just like they serve it at our favorite Mexican restaurant!

We made this today and it was very tasty! We tend to have issues with our pork being dry when slow cooked though. Any suggestions for us?
