Slow Cooker Low-Calorie Chicken Gumbo

Ingredients

16 oz. gumbo-style vegetables, frozen pkg. (okra, peppers, onions, etc)
12 oz. chicken breast, (grilled adds flavor) cut into bite size pieces
2 c. chicken broth, reduced-sodium
2 celery, ribs, chopped
4 oz. chilies, mild, canned
1 medium garlic clove, minced
29 oz. tomatoes, diced, canned
1 tsp. Creole seasoning
1 tsp. salt
1 tsp. pepper
1 bay leaf
1 T. flour, whole wheat all purpose flour
1 1/2 c. rice

Happy to share this Slow Cooker Low-Calorie Chicken Gumbo from my Mother-in-law. While on Weight Watchers she made it often, and because it is so good she still makes it. Your family will truly enjoy this EASY and TASTY dish! Great to use leftover grilled chicken too.

  1. Spray nonfat cooking spray in a large skillet. Place garlic, celery and veggies in skillet and sauté over medium-high heat, stirring frequently, about 2 minutes.
  2. Add in flour and cook for 1 more minute.
  3. Combine tomatoes, chicken, chicken broth, bay leaf, salt, pepper and Creole seasoning, and stir into skillet.
  4. Transfer to slow cooker to meld the flavors together.
  5. Cover. Cook over Low for 1-2 hours.

Optional: Serve over a bed of rice (prepared per the package instructions), or substitute rice with Shirataki Noodle (one Brand Miracle Noodle).

I made this recipe and although it didn’t come out quite as planned (I’m having to transfer everything over to our weight system). It was slightly more liquid than expected so I added potatoes and served in a bowl with crusty bread. My husband now calls it gumbo stew which is amazing as he doesn’t like “stews” but he went back for more! Thank you so much for your amazing recipes, I am happily working my way through them. I did not follow this exactly, but it is delicious. This one is a little too much prep for me, I gravitate towards one-pot-throw-it-all-in-all-day meals due to my family’s schedule, so I just put all the ingredients together except the chicken and okra, and instead of flour I used 2T of quick-cooking tapioca. I added the chicken breasts uncut and still partially frozen, and some turkey sausage, and more veggies to fill up my pot some more. Just made this and husband loved it! Now I must try your other gumbo recipes too. Another favorite I will be adding to my recipe ‘keeper’ album.
