Need dinner ideas for this week? Here’s what’s on my dinner menu! One of the great things about using a slow cooker is I usually have leftovers! I almost always eat leftovers for lunch the next day. :)

MONDAY:
Eggplant Parmesan + fresh pasta with mixed green salad

TUESDAY: (St. Paddy’s Day!)
Slow Cooker Corned Beef & Cabbage

WEDNESDAY:
Chicken Tortilla Soup

THURSDAY:
Grilled Hamburgers & Slow Cooker Roasted Veggies
*Note: The leftover roasted veggies are perfect to throw in an omelet!

FRIDAY:
Slow Cooker Maple Salmon & jasmine rice with a side of broccoli
Note: Refrigerate leftover salmon and then crumble (cold) over top mixed greens for a delicious salad. I like to add edamame beans, slivered almonds and top with a ginger salad dressing!
