Slow Cooker Pumpkin Oatmeal

  • Cooking Time:

    4-6 hours
  • Servings:

    4

Ingredients

2 c. old fashioned (NOT quick oats)
4 c. water
1/2 c. pumpkin
4 tsp. pumpkin pie spice
4 T. brown sugar, or Stevia brown sugar substitute
4 (1 g) packet Splenda sugar substitute (or Stevia)
1/4 c. chopped walnuts (optional)

When I think of the Fall season, I think of Pumpkin, I also think of Slow Cooker Pumpkin Oatmeal!

  1. Combine all ingredients in your crock. Adjust sugar if you do not like your Oatmeal too sweet!
  2. Cover. Cook on Low for 4-6 hours.
  3. Give your oatmeal a good stir, and serve with walnuts if desired. I enjoy this oatmeal with a honey latte or some great flavored coffee.

This recipe sounds wonderful. I am going to try this very soon. I noticed the nutrition facts does not specify the serving size or how many servings this recipe makes. Do you know what a serving size is? Thanks.

What amount of sugar would you use instead of the splenda/artificial sweetner. My coworker cannot use any artifical sweetners and I would like to make this for a breakfast potluck.

Do you think I could use skim milk instead of water? I’ve done that with other overnight crockpot oatmeal recipes (e.g., apple cinnamon), and we like our oatmeal creamy.

I used steel cut oats instead of old fashioned and it was virtually flavorless. Do I need to add more flavor because of the steel cut oats?

Is this proportion of oats & water the normal amount indicated on the oatmeal packaging? When I made our gluten-free oatmeal on the stove this morning, it was 1/2 c oats to 1 c water. Just thought I’d double check. I was glad to find this recipe using regular oats for the crockpot since all the others I found were for the steel cut oats and I haven’t seen any gluten-free yet! Those steel cut recipe comments seemed like they didn’t always turn out either! 😉
