Ingredients

4 Chick­en Breasts
1 c. apri­cot jam
1 c. catali­na or french dress­ing
1 & 1/2 pack­et Lip­ton Onion Soup Mix

Slow Cook­er Catali­na Chick­en is an easy week­night meal and oh-so-easy!

  1. Place chick­en in a slow cook­er.
  2. Com­bine the remain­ing ingre­di­ents in a bowl; pour over chick­en.
  3. Cook on low for 6–8 hours.

Serve over rice or pas­ta.

Pic­tured with fresh apri­cots, deli­cious to serve on the side!

The high calo­ries, high cho­les­terol, and high sug­ar make this impos­si­ble for a per­son with dia­betes to eat.….it does sound good how­ev­er, and I wish I could eat it!!

I don’t know what would make the fat so extreme­ly high but look at that sodi­um too! Chick­en is sup­pose to be healthy! Not this meal. 781 calo­ries for one piece of chick­en! That’s crazy. It’s the processed foods… the sal­ad dress­ing, apri­cot jam and pack­age onion soup mix is ridicu­lous­ly high in salt.

How about sub­bing with low sug­ar jam, or even pureed apri­cots, low cal dress­ing and low sodi­um beef bouil­lon cube?

sim­ply sub­sti­tute reduced sug­ar jam and Pen­zys salt free gran­u­lat­ed onion (it is roast­ed) or their dehy­drat­ed onion. I have done this and works fine.
