Cooking Time:2 hours
Ingredients2 - 8 oz. packages of cream cheese, (softened)
3/4 c. half and half
1 tsp. onion, finely chopped
1 clove garlic, minced
1/2 c. Parmesan cheese, grated
10 oz. bag frozen cut spinach, thawed and well drained
13 oz. can quartered artichoke hearts, rinsed, drained and chopped
2/3 c. Monterey Jack cheese, shredded
- Combine the cream cheese and half and half in a bowl until well blended.
- Add the remaining ingredients and stir well.
- Pour the mixture into the slow cooker.
- Cover. Cook for 2 hours or until thoroughly melted.

Can you make this with fresh spinach? If so, how much do you think would be equivalent to 10 oz of frozen spinach?
I have used fresh spinach, in fact I like to use fresh ingredients when I can. If I recall, I used about a cup and a half of the fresh. But make this recipe your own, and just visualize what you think would be the right amount. Hope this helps, and Happy Crocking!
What size slow cooker ?
Hi Jean, The 3-4 quart slow cooker would work great for this recipe. The key to slow cooking is to have the slow cooker 1/2 to 2/3 full to crock properly. Happy Crocking!
