My Crocktober Challenge Meal Schedule — 10/06–10/11

Many have asked what I am mak­ing dur­ing the Crock­to­ber Slow Cook­ing Chal­lenge, so I want­ed to share my meal plans with every­one! I typ­i­cal­ly serve a spinach or mixed green sal­ad when I make a main dish or soup/stew in my slow cook­er and that is plen­ty! Also, if I have a lot of left­overs (like when I make a big batch of chili or soup) I will freeze half of it right away since we can nev­er fin­ish it. That way I know I always have a sec­ond meal in the freez­er when­ev­er we’re ready for it!

MONDAY: Slow Cook­er Ground Beef Lasagna Soup
–I’m demon­strat­ing this recipe on the mid­day news on ABC 15 in Phoenix on 10/06! Look for a video link soon! 🙂

TUESDAY: Slow Cook­er BBQ Chick­en Cheesy Sand­wich­es — I usu­al­ly eat this with­out the bun to save on carbs, but my fam­i­ly likes it just as the recipe states, bun and all! Corn makes a nice side dish to this recipe.

WEDNESDAY: Slow Cook­er Sun­dried Toma­to Risot­to — This can be a main dish, or serve a small­er por­tion as a side with left­over chick­en from Tues­day!

THURSDAY: Slow Cook­er Tomatil­lo Lime Chick­en — I love this with a sim­ple side of rice and a light sal­ad! If there are any left­overs, I will put them over a green sal­ad for lunch on Fri­day.

FRIDAY: Slow Cook­er Apri­cot Pork Ten­der­loin — This can be made with pork chops, too! That is actu­al­ly what I am plan­ning for this week since I already have pork chops in my freez­er.  I’m on a quinoa kick, so I’ll serve that as a side dish along with a sal­ad.

SATURDAY: Slow Cook­er Gar­den Frit­ta­ta — I have an ear­ly flight on Sat­ur­day morn­ing so I will enjoy wak­ing up to a healthy break­fast!  This def­i­nite­ly beats eat­ing at the air­port and with a slow cook­er lin­er, clean up will be a breeze!
