**Slow Cooker EASY Breakfast Casserole

Slow Cooker EASY Breakfast Casserole

Ingredients

1 lb. Sausage
32 oz. Shredded Hash Browns, frozen
12 Large Eggs, beaten
1/4 c. milk
Salt & Pepper to taste
3 c. Sharp Cheddar Cheese, shredded

This is the easiest breakfast casserole recipe for the slow cooker and it is SO tasty! Slow Cooker EASY Breakfast Casserole has only five ingredients (+ Salt & Pepper)!

      1. Cook the sausage and place on a paper towel-lined plate to absorb the grease.
      2. Layer the ingredients by placing 1/3 of the hash browns in the bottom of the slow cooker, followed by 1/3 of the cheese and topped by 1/3 of the sausage.
      3. Repeat layers until you have used all the sausage, hash browns and cheese.
      4. Whisk the eggs and milk together in a bowl.
      5. Pour the egg mixture over the layers in the slow cooker.(NOTE: You can use two cartons of egg substitute in place of the eggs/milk, if desired.
      6. Add salt & pepper to taste.
      7. Cover & Cook on LOW for 6-7 hours.

NOTE: If desired, you can substitute another breakfast meat like ham or bacon!

NOTE 2: Suggested by reader to lightly salt this recipe.

I made this last week and it was a big hit! I’m making it for dinner tonight (Breakfast for dinner, a fav!) but only have refrigerated hash browns, not the frozen – think it will make a difference? Maybe I should put them in halfway thru the cooking? Thanks – I’m addicted to your site and new app!! 🙂

I made this this week for visiting family. It was EASY and AMAZING. Not one bite was left I do have a suggestion, you really need to lightly salt and pepper the potato layers.

I tried this and I have to say that I was a little disappointed. It is very bland because there isn’t any seasonings in it. I cannot taste the eggs and I messed up and used half Colby/jack so I couldn’t taste the chees either. There isn’t enough sausage and I even added some chopped ham as well. This is a very good base to add to. Did you ever have those breakfast bowls? Well that is what I am using the leftovers for. I made a recipe similar to this that you had posted in the Get Crocked Slow Cooker Holiday Classics Special Edition and I was quite disappointed. I followed the recipe exactly, but it came out very mushy and lacking flavor. Any suggestions as to what might have gone wrong?

Sorry for the late response Crock Pot Girl. The recipe that I used that turned out mushy was in the Holiday Classics Magazine Pg. 32 called The Ham and Egg Casserole. The picture on the page looks delicious! And I loved the idea that it could be made and ready for Christmas morning. It just didn’t work out for me….
