**Slow Cooker Bacon and Tater Tot Casserole

Slow Cooker Bacon and Tater Tot Breakfast

  • Cooking Time:

    10–12 hours

Ingredients

1 lb. Frozen Tater Tots (about half of a 32oz. bag)
1 lb. Bacon, cooked and crum­bled or 12 oz. Pack­age of Cana­di­an Bacon, chopped into small pieces
1 Large White Onion, chopped
1 Green Bell Pep­per, diced
2 c. Grat­ed Sharp Ched­dar Cheese
1/4 c. Grat­ed Parme­san Cheese
8 eggs
1 c. Milk
1 tsp. Ground Mus­tard
1 T. Corn Starch
Salt & Pep­per, to taste

 

  1. Lay­er ingre­di­ents in a 5 quart slow cook­er start­ing with half of the tater tots.  Fol­low with half each of the bacon, onions, green pep­pers, and cheeses. Repeat lay­ers again. You should have cheese on the top.
  2. Whisk the eggs, milk, ground mus­tard, corn­starch and some salt & pep­per togeth­er in a bowl
  3. Pour egg mix­ture over the lay­ers in the slow cook­er.
  4. Cov­er. Cook on Low for 6–8 hours

Note: This recipe would be easy to dou­ble, just use your larg­er (6–7 quart) slow cook­er!

I real­l­ly want to make this with the items I have on hand. Was think­ing of swap­ping out the frozen tots, with frozen sweet pota­to tots. Cana­di­an bacon with real bacon bits. Sub­bing out the cheeses for a mex­i­can cheese blend and the whole milk for 2%. I hate to alter people’s recipes with­out try­ing it the orig­i­nal way first, then mod­i­fy­ing to our taste, just don’t have some of the exact items and would real­ly like to try it out. Any rea­son you think those sub­sti­tu­tions wouldn’t work? Thanks, Lisa!

I tried this recipe for an easy sleep­over break­fast for eight 12 and 13 year old girls. They seemed to like it. I dou­bled the recipe for my oval, six quart cook­er. I thought it turned out pret­ty dry although it’s pos­si­ble I used too many tater tots (I sin­gle lay­ered, but eye­balled it). Next time, I will add at least 6 more eggs and 1/2 milk and more cheese. That said, I will def­i­nite­ly try this again because it’s so sim­ple and great to have it ready when you get up in the morn­ing. Thanks for the recipe! Love… Read more »

(I’m not find­ing any “serves #” infor­ma­tion any­where.)
I’ve tried a ver­sion of this recipe for a teach­ers’ break­fast at my kids’ school — it was a BIG hit!!

Is the 10–12 hours for real? Even on low my crock­pot would prob­a­bly burn at 10 hours.

can you use frozen hash brown pat­ties with this recipe? Do I need to shred them or just lay them in the bot­tom of the crock pot?

The pho­to looks like there are mush­rooms in the casse­role. I love mush­rooms and was think­ing of adding any­way (instead of the green pep­per my kids won’t eat). Would they add too much extra liq­uid?

I tried this out this last week­end. It was great — I’ll def­i­nite­ly make it again! I would mea­sure the tater tots — my tot lay­er didn’t cov­er the bot­tom of my slow cook­er, but it didn’t seem dry at all.
