1 3 lb chuck roast
1 large onion, sliced
1 large green pepper, sliced
1 large red pepper, sliced
4 cloves garlic, minced
1 cup water
1/2 cup soy sauce
4 tablespoons corn starch
2 teaspoons ground ginger
2 teaspoons sugar
4 cups cooked brown rice

  1. Put meat, vegetables, garlic and water in slow cooker and cook on low for 8-10 hours.
  2. Mix soy sauce, corn starch, ginger and sugar in a bowl or measuring cup.
  3. Remove meat from slow cooker and set aside.
  4. Pour vegetables and liquid into a large saute pan and simmer on medium heat.
  5. Add soy mixture and stir until thickened.
  6. Pull or slice beef and add to vegetables and sauce.
  7. Serve over rice.

I can’t believe how easy this one was and it seems so much healthier than Chinese take-out. I love your site. Thanks for posting this one.

This recipe has changed since the last time I made it. Followed it to a T. The peppers are overcooked and the meat is tough. Great! I’m having company for dinner.
