Slow Cooker Pumpkin Latte

Ingredients

4 c. of milk (can sub almond, coconut or soy milk if you pre­fer)
1/2 c. pump­kin, canned
1 T. vanil­la extract
1 tsp. of pump­kin pie spice or 1/2 tsp cin­na­mon and a sprin­kle of cloves and nut­meg
1/2 c. sug­ar (or sug­ar sub of your choice)
2 c. of strong brewed cof­fee or espres­so
Whipped Cream or Cool Whip top­ping (option­al)

With this recipe for a Slow Cook­er Pump­kin Lat­te, you can skip the expen­sive cof­fee place and enjoy your favorite fall bev­er­age in the com­fort of your own home — right from your Slow Cook­er! This recipe can be dou­bled, tripled or even cut in half depend­ing on how many you are serv­ing. You just need to adjust to the crock pot size for the quan­ti­ty!

  1. Pour all ingre­di­ents except the whipped cream into a slow cook­er.
  2. Whisk to mix well.
  3. Crock on High for 2 hours until hot and the fla­vors blend. (It will smell great!)

Option­al:  Top lattes with whipped cream and a dash of cin­na­mon.

This would be a very guilty treat for me since I’m dia­bet­ic. I’m allowed 4 carbs each for lunch and din­ner, 2 -3 for break­fast and 1 for a treat. I think I will sub some Splen­da for half of the sug­ar and low fat milk. I think we are going to have some Christ­mas morn­ing

Hey, I just made this and went to fix a cup and some­thing went wrong… My milk looks like it just spoiled and is sep­a­rat­ed from every­thing else. I used whole milk and it is still good and in date, I dou­bled checked and I did every­thing right.. Do you have any idea what could have gone wrong? I also had some­thing sim­i­lar in a soup I fixed yes­ter­day that had half and half in it. Thanks for any help!

I have this in the crock pot right now heat­ing. I plan to add a 50/50 mix of pump­kin spice Kahlua and cin­na­mon spice Kahlua. I also used fresh pump­kin puree.

We made it yes­ter­day and it was very good. ♥ But we both thought is was to sweet for our taste. So next time I will use no sug­ar so any­body can sug­ar it by them­self like a cup of cof­fee.

And we had 3 cups of it left over so I put a stick of but­ter and 1,5 cups of oats into it.

Overnight on low for 8 hours I got a deli­cious pump­kin lat­te oat­meal! 🙂

I just made this. Sooooo good! I sub­sti­titued 2 of the cups of milk for one cup Eggnog Cof­fee Mate and 1 cup Fat Free Orig­i­nal Cof­fee Mate. I’m also not a big cof­fee lover, so I made one reg­u­lar cup through my Keurig k-cup cof­fee. I than made the sec­ond cup using the same pod, but low­er water set­ting.

Made this lat­te at Thanks­giv­ing. It was deli­cious. One thing how­ev­er, the pump­kin left a sen­ti­ment and we had to strain it as we ladled it into cups — did I not mix it cor­rect­ly? But it did not stop us from enjoy­ing the whole batch. I will make it again for Christ­mas 😉
