Why do the potatoes have to be dried?

So simple. A friend baked potatoes in the crock pot the other day for a work lunch. I was wondering if the process would work for sweet potatoes too. Thanks for confirming this. (We grew about 2 bushels of sweet potatoes this summer, so we have a lot to enjoy). BTW, do you ever season sweet potatoes with savory herbs, rather than brown sugar? We do not have sweet tooths, ourselves. We lean toward garlic, tumeric, curries, and various peppers for seasoning.
