Slow Cooker Breakfast Bake

Ingredients

24 oz. hash browns, shredded, bag
1 T. onion, finely chopped
2 c. ham, diced
2 c. cheese, cheddar, shredded
1 c. cheese, mozzarella, shredded
1/4 c. parsley, fresh, chopped
12 eggs
1 c. evaporated milk
1 tsp. salt
1 tsp. pepper
1 lb. bacon, fried until crisp or Sausage if you'd like

I love omelets and bacon, so that’s why I love this Slow Cook­er Break­fast Bake.  This recipe is def­i­nite­ly in our family’s break­fast rota­tion.  We also always make it over the hol­i­days and when we have guests in town. Made with Sausage is very good too! Enjoy!

  1. Grease the crock of a 6 quart slow cook­er or use a slow cook­er lin­er and grease.
  2. Mix the hash browns and the chopped onion in a bowl.
  3. Spread half of the hash browns on the bot­tom of the greased crock.
  4. Place 1 cup of the ham on top of the hash browns and dis­trib­ute even­ly.
  5. Mix both of the cheeses with the pars­ley and stir to mix even­ly. Sprin­kle 1/2 of this cheese mix­ture over the ham.
  6. Put a sec­ond lay­er of the the remain­ing hash browns, ham and cheese in the same order, pat­ting each lay­er down as it is added.
  7. When all lay­ers are fin­ished, com­bine the eggs, evap­o­rat­ed milk, salt, and pep­per in anoth­er bowl, whisk­ing until smooth. Care­ful­ly pour the egg mix­ture over the hash brown, ham and cheese lay­ers.
  8. Cov­er & Crock on LOW for 4 to 5 hours.
  9. About 15 min­utes before you’re ready to serve this dish, fry the bacon until crispy and break it into large pieces.
  10. Remove the lid on the slow cook­er and place the bacon pieces or sausage even­ly on top of the break­fast bake.
  11. Cov­er & Crock on LOW for an addi­tion­al 15 to 20 min­utes.

NOTE: When the bacon/sausage is warm, it is ready to serve.

NOTE: If you are using the NEW Crock-Pot Casse­role crock you will want to halve this recipe!

I’ve nev­er used my crock pot for break­fast so this might be a sil­ly ques­tion… It says cook 4–5 hours. But, I sleep longer than that. LOL! DO I set it to switch to “Keep warm” or can I leave it on low all night?

I’m going to use a timer like you can use for lamps. It will turn it on auto­mat­i­cal­ly at the right time. I think that will work per­fect­ly.

I think I am going to try this. But do you think I could shred pota­toes instead of using a bag of hash browns or should I cube the pota­toes? Would I have to do any­thing to them before they go into the crock­pot? Also I am going to add spanich has any­one tried that?

This may be a sil­ly ques­tion, but does the egg part fluff up or dis­solve into the mix­ture? I can’t stand the taste or smell of eggs but all the oth­er ingre­di­ents sound deli­cious!

I am look­ing at pur­chas­ing a new crock pot. Do most of your recipes fol­low a 6 quart size? Is that the stan­dard? There are 3 peo­ple in my fam­i­ly so we don’t need any huge amount of food.

I might try one of those timers you put on your light when you leave for vaca­tion to turn on your lights at night. Set it for the time you want to turn on your crock pot and when you get up your break­fast is done.…walllllla!

I love this recipe and have made this with hash­browns and then tried it with diced, raw pota­toes. My fam­i­ly vot­ed the diced pota­toes were the best. I also sub­sti­tut­ed sausage instead of ham or bacon. Deli­cious!

My crock­pot might be weird, but the only set­tings it is is HIGH for 4 hours, HIGH for 6 hours, LOW for 8 hours, or LOW for 10 hours. Should I sim­ply put it on low and then set a timer?

Skip the con­densed milk, use reg­u­lar. Add red pep­pers and cayenne pep­per.

It says evap­o­rat­ed milk, not con­densed. Two dif­fer­ent things. Evap­o­rat­ed milk is not sweet. 🙂

I made this for my fam­i­ly yes­ter­day morn­ing and um. I don’t know if I did some­thing wrong, but it was the con­sis­ten­cy of a mushy quiche. I used Turkey sausage instead of ham because that’s what I had on hand, and I pre­cooked it. I lay­ered every­thing cor­rect­ly and the hash browns were frozen when I put them in. I don’t know but it just had a bad tex­ture. My fam­i­ly told me not to make it any­more lol . Maybe pre­cooked diced pota­toes and cooked let would be bet­ter. I don’t know. 🙂

I made this for tday break­fast. For­got the bacon and omit­ted the onions and pars­ley. It was deli­cious and got rave reviews from the fam. I am try­ing again tonight for xmas bfast. I will be sub­bing jim­my dean sausage crum­bled and pre­cooked for the ham and includ­ing the onion and pars­ley. Hope to remem­ber the bacon!

Made this Christ­mas morn­ing 2013. Added a full 28 oz. pkg. of pota­toes O’Brien, added 12 sausage links sliced in addi­tion to the 8 oz. of ham. Didn’t vary the oth­er ingre­di­ents. It got a lit­tle too done around edges, as my crock­pot runs hot. Feel like I should have increased the eggs by one or two since I added more of oth­er ingre­di­ents, but it tast­ed great, and made A LOT! Will make again and vary things here and there. Thanks!
