**Slow Cooker Easy Baked Potato Soup

Slow Cooker EASY Baked Potato Soup

    7 — 9 hours

Ingredients

20 pota­toes, red, cut into cubes
1/4 c. and 2 T. flour, all-pur­pose
1 1/2 c. bacon, real bits
2 onions, small red, chopped
2 cloves gar­lic, minced
1/4 c. chick­en bouil­lon gran­ules
2 T. ranch dress­ing mix
1 T. and 1 tsp. pars­ley, dried
1 1/4 tsp. sea­soned salt, if you like salti­er, you can add salt at the table.….
1 tsp. pep­per, black, ground
6 c. water
2 c. half-and-half
1 c. cheese, Ched­dar, shred­ded, or to taste
1/2 c. green onions, chopped, or to taste

Slow Cook­er EASY Baked Pota­to Soup is not only EASY it is DELICIOUS! Takes min­i­mal prep time to put togeth­er, so great for the work­ing house­hold!

  1. Place pota­toes in the bot­tom of your slow cook­er.
  2. Sprin­kle flour over the pota­toes, toss­ing pota­toes to coat.
  3. Sprin­kle bacon bits, red onion, gar­lic, chick­en bouil­lon, ranch dress­ing mix, pars­ley, sea­soned salt, and black pep­per over the coat­ed pota­toes.
  4. Pour water into the crock pot.
  5. Cov­er. Cook on Low 7 to 9 hours.
  6. Pour half-and-half into the soup; cook anoth­er 15 min­utes to warm through.

Gar­nish with Ched­dar cheese, bacon bits, dol­lop of sour cream, and green onion to serve!

Will the soup thick­en the longer it cooks? It has been in the crock pot on low for 4 hours and it is real­ly watery and pota­toes aren’t soft at all:( Don’t know if I’m over react­ing too ear­ly or if I messed some­thing up.

How many serv­ings does this recipe make? And are you sure there are 771 calo­ries per serv­ing? Sounds deli­cious but 771 is a lot!

I think the 2 cups of half and half is the killer. I would sub­sti­tute it with whole milk, or canned evap­o­rat­ed milk, or low­fat plain yogurt. Sounds deli­cious and I can’t wait to make it.

I’ve been cook­ing for 8 hours on low and the pota­toes are far from soft. Din­ner for guests is in half an hour and I’m tempt­ed to just order a piz­za. Is there a fast fix??

(And is the rea­son­ing for this because of my crock­pot?)

Going to make this tomor­row. Do I peel the pota­toes? FYI — Half and half doesn’t show up as an ingre­di­ent on the IPad app, it only appears in instruc­tions so you have to come here to find out how much to add.
