Slow Cooker EASY Breakfast Casserole

    5–6 hours
  • Servings:



1 lb. sausage
32 oz. pota­toes, hash brown, shred­ded, frozen
1 dozen eggs, large, slight­ly beat­en (or 2 car­tons of egg sub­sti­tute)
3 c. cheese, ched­dar, shred­ded

Slow Cook­er EASY Break­fast Casse­role only has four ingre­di­ents and is a won­der­ful recipe that can cook while you sleep!

  1. Brown sausage and strain to remove excess grease. When using sausage links or pat­ties, chop them up into bite size pieces.
  2. Place 1/3 of the hash browns in the bot­tom of the slow cook­er, fol­lowed by a por­tion of the cheese and topped by 1/3 of the sausage.
  3. Repeat until the sausage is all used up, hash browns and cheese…or until the slow cook­er is full.
  4. Pour the eggs on top of the con­tents and it will run down through the ingre­di­ents in the slow cook­er.
  5. Cov­er. Cook on Low for 5–6 hours.

I’m won­der­ing if I could 1&1/2 the recipe (or even dou­ble it) to feed 8 peo­ple? Would the cook­ing time change? Also, can you tell me what size crock­pot you’d use for this? Thanks so much.

If it only cooks 5 — 6 hrs, what do you rec­om­mend for hav­ing it at about 9:00 a.m.? Can you pre­pare it in advance and put in fridge? Then set alarm to get up at 3:00 a.m. to start it?

Thank you for this recipe. I loved hav­ing only one day’s worth of dish­es for four days of break­fast, and reheat­ing sure beats cook­ing every morn­ing. My only com­plaint was it was a lit­tle bland. My ini­tial thought was to dou­ble the sausage, but instead of doing that and ratch­et­ing up the fat and calo­ries, what about chang­ing up some of the ingre­di­ents? Like a spicy sausage, or shred­ded pep­per jack, or the pota­toes with the pep­pers and onions? Thoughts?

Kind of a sil­ly ques­tion, my crock­pot has a “warm” set­ting, would I be able to cook it on warm for 8–9 hours and it be the same??
