**Slow Cooker Cheesy Rice and Broccoli

Slow Cooker Cheesy Rice and Broccoli

  • Cooking Time:

    3-4 hours
  • Servings:

    10-12

Ingredients

1 c. uncooked regular long-grain white rice
2 T. butter
1/2 c. onion, diced
15 oz. jar Cheese Whiz sauce
1 can (10 3/4 oz.) condensed cream of mushroom soup
2/3 c. milk
¼ tsp. pepper
2 c. fresh broccoli florets

This Slow Cook­er Cheesy Rice and Broc­coli is a favorite come Hol­i­day time. Some­times, we like to add sliced mush­rooms as well. Hope you like this as much as we do!

  1. Light­ly grease a 4–5 Quart slow cook­er with but­ter.
  2. Melt 1 T. but­ter in skil­let over medi­um-high heat.  Add diced onion, and sauté until translu­cent. Remove from heat.
  3. In a medi­um bowl, mix togeth­er soup, milk and pep­per.
  4. Add rice, cooked onion, then cheese whiz.
  5. Final­ly, stir in broc­coli then trans­fer all to the pre­pared slow cook­er.
  6. Cov­er and Cook on LOW 3–4 hours, or until rice is ten­der.

Option­al: Adding diced chick­en chunks can make this a full meal, although it would change it from a veg­e­tar­i­an recipe.

Hi, the recipe calls for cheese wiz sauce, how­ev­er in the steps, it says to add cheese cubes. Could the cheese wiz be sub­sti­tut­ed with just ched­dar cheese and per­haps more milk?

Did you pre­cook the rice? Tried it tonight with chkck­en and the rice didn’t cook.

I do a very sim­i­lar one but instead of Cheez Whiz I do 1Cup of water and add a full can of milk instead of the 2/3C…not sure if that is the same mea­sure or not? I melt cheese on the top near the end or just on each person’s serv­ing. Oh..and I use brown or wild rice 🙂
