**Slow Cooker Broccoli Cheddar Soup

Slow Cooker Broccoli Cheddar Soup

    6 hours on Low

Ingredients

2 T. olive oil
1/4 c. whole wheat flour
4 c. chicken or vegetable broth, low sodium (vegetable or vegetarians)
10 oz. broccoli, frozen
3 c. cheddar cheese, shredded
1 garlic clove, minced
Salt and Pepper to taste


Love Broc­coli Ched­dar Soup, and this one is so easy to make, and very tasty!

  1. Place the olive oil in a skil­let and whisk in the flour with the oil.
  2. Next, add in the broth and whisk well so there are no flour lumps.
  3. Pour the entire mix­ture into a slow cook­er, adding in the broc­coli.
  4. Add gar­lic, salt and pep­per.
  5. Cov­er. Cook on Low for 6 hours.
  6. OPTIONAL step: Blend the soup by using a hand held stick blender to puree some of the large broc­coli flo­rets. This thick­ens the broth and makes the soup smoother.
  7. Stir in 2 1/2 cups of the ched­dar cheese. Con­tin­ue stir­ring until all cheese is melt­ed and mixed well in the soup. (reserve remain­ing cheese for top­ping)

 

Serve with some steamed broc­coli on top, and sprin­kle with cheese.

Looks good! Your instruc­tions do not seem to men­tion the cheese at all though. At what point is it added?

How many peo­ple does this serve? I am plan­ning to make it for a fundrais­er and use gluten free Cup4Cup flour.. Won­der­ing if I should dou­ble the recipe and change the cook­ing times?

I am lazy, so I skip the stove step entire­ly. I add a large pota­to and a bit more broc­coli instead to thick­en the soup a bit. The orig­i­nal ver­sion would prob­a­bly win a side by side taste test, but it makes my life a lit­tle eas­i­er 😉

This was a hit at my house. Keep those good healthy recipes com­ing for fam­i­ly din­ners. I added some ham I had and also some chopped red pota­toes. yum!! per­fect meal .

I am mak­ing this as I type this. My ques­tion is could I add milk or cream if I want­ed? At the end maybe with the cheese? Just curios about creami­ness with­out the milk.
