Slow Cooker Stuffed Green Peppers

    6–8 hours

6 large green pep­pers
1 lb. ground beef, browned
2 T minced onion
1 tsp. salt
1/8 tsp. gar­lic pow­der
2 c. cooked rice
15-oz. can toma­to sauce
3/4 c. shred­ded moz­zarel­la cheese

The fla­vor from these Slow Cook­er Stuffed Green Pep­pers will have your guest ask­ing for more!

  1. Cut pep­pers in half and remove seeds.
  2. Com­bine all ingre­di­ents except pep­pers and cheese.
  3. Stuff pep­pers with ground beef mix­ture; place in slow cook­er.
  4. Cov­er. Cook on Low for 6–8 hours or High for 3–4 hours.

Sprin­kle with cheese dur­ing last 30 min­utes.

6 to 8 hours in the crock pot was far too long. Made them over the week­end. The green pep­per tast­ed very bit­ter from over­cook­ing them. 4 hours is more real­is­tic. Ate the inside of the green pep­per which was very tasty but had to throw the pep­per away. Will make again but not in the crock pot.


the pep­pers may have tast­ed bit­ter because they had 4 humps on their bot­tom. The ones with 3 are much bet­ter tast­ing for cook­ing.

I made these and used gr. Turkey and 2% cheese they were great haven’t fig­ured the calo­ries but sure they where . cut a good amount .I assume a serv­ing is 1/2 pep­per. Even my skin­ny friends like them.
