Slow Cooker EASY Cheesy Chicken, Broccoli and Rice

Ingredients

3 c. brown rice, uncooked
6 c. water
2- 10 3/4 oz. Broc­coli Cheese Soup, 98% Fat Free
4–6 chick­en breasts, bone­less, skin­less, frozen
16 oz. broc­coli, frozen
Pep­per to taste and/or your favorite low-sodi­um sea­son­ings
1 c. shred­ded Ched­dar Cheese

This recipe for Slow Cook­er EASY Cheesy Chick­en, Broc­coli and Rice real­ly is EASY. Just put every­thing in the crock, set your timer and for­get it until it’s time to eat!

  1. Stir uncooked brown or white rice, water, broc­coli & one can of soup togeth­er in the slow cook­er.
  2. Place frozen chick­en breasts on top. (note: If your chick­en is thawed, reduce crock­ing time by 1 hr.)
  3. Pour sec­ond can of soup over chick­en breasts and sprin­kle with sea­son­ings.
  4. Cov­er. Cook on Low for 8 hours.

OPTIONAL: You can cut the chick­en breasts in bit size pieces when serv­ing! I do this for my lit­tle one!

Serve with Chick­en breasts over the rice and broc­coli. Top with a few sprin­kles of Ched­dar Cheese.

I saw the note about using thawed chick­en and reduc­ing the time by an hour, but do you think you can dice the raw chick­en? Or will the small­er pieces make for a dri­er chick­en?

What kind of rice should you use? I made it with brown min rice today and it seemed to turn out a lit­tle mushy. It tast­ed great and will make it again just want­ed to con­firm the rice:)

If you use 3 cups of uncooked brown rice won’t that make an awful lot of rice? I know that 1 cup of uncooked white rice makes 3 cups of cooked rice, because rice triples when it cooks. Do you end up with 9 cups of rice? I see it serves 8 but that still seems like a lot of rice.

If I have the instant brown rice should I use that or do I need to use reg­u­lar brown rice?

I used reg­u­lar brown rice. After cook­ing all day the crock­pot was still full of water and the rice was uncooked. Took it out of crock­pot and fin­ished cook­ing on the stove. It made a lot of rice. I don’t think I would make this again.

I used a 7 qt crock­pot and fol­lowed the direc­tions exact­ly as writ­ten. I just got home to find the entire 7 qt insert full to the top with more rice than our fam­i­ly of four can eat even if we had it every night of the week and the rice was a big gloopy mess (very starchy with an oat­meal con­sis­ten­cy and it actu­al­ly looks like oat­meal too). I just made this and it wasn’t bad, but I too found it to be pret­ty bland. I used a lit­tle Mrs. Dash and some pep­per, but it just didn’t have much taste. Not sure if it cooked too long. I will eat the left­overs, how­ev­er, there is SO much rice left!

I made this for din­ner tonight and I wish I’d read these com­ments before­hand!! Oops :/. I used white rice & you should def­i­nite­ly reduce the num­ber of cups you put in if using white! It made way too much rice vs. every­thing else and its mushy, too. So I should’ve wait­ed til clos­er to the end to add it. Oh well! It does taste great and now I know what not to do for next time! I noticed it says to use bone­less skin­less chick­en breast. I have bone-in chick­en breast that I would like to skin and use instead. Would that still work? Does the cook­ing time change at all?

Darn! I wish I had seen this ear­li­er. I already have sal­sa chick­en in the crock pot. I’m mak­ing this on Wed. I am going to use a wild rice blend that I get from our bulk sec­tion of the gro­cery store and add some mush­rooms. I made the mis­take of buy­ing a HUGE pack­age from Cost­co (what was I think­ing?) so I need to use them up. Howdy! I am enjoy­ing a wee bit of rain in CA and I am look­ing for­ward to this dish. Ques­tion — I am hav­ing a bit of trou­ble find­ing broc­coli cheese soup. Can you rec­om­mend a brand or can I use cream of broc­coli and sup­ple­ment with cheese? I also got quick cook­ing brown rice — will the time need to be adjust­ed? Not even think­ing I put the white rice in there with every­thing from the begin­ning. Will it be ok until it’s done cook­ing????

I prob­a­bly won’t have a response before cook­ing, how­ev­er, I plan on using chick­en cubes. I’ll add the white rice 2 hours lat­er. My crock runs very high so I plan on cook­ing only 4–5 hours. Are cubes ok?
