Slow Cooker Paleo Italian Chicken

3–4 bone­less skin­less chick­en breasts
1/2 c. olive oil
1/2 c. red wine vine­gar
1/2 c. shred­ded Cashew Parme­san, sub­sti­tu­tion for Parme­san Cheese
4 cloves gar­lic, minced
1 T. Ital­ian sea­son­ing
5 red pota­toes, cut in wedges
5 car­rots peeled and cut into chunks

Your veg­etable, starch, and pro­tein, all in one pot!  Slow Cook­er Paleo Ital­ian Chick­en is one easy week­night meal!

  1. Grease crock with 1 T. olive oil. Whisk remain­ing olive oil, red wine vine­gar, gar­lic and Ital­ian sea­son­ing togeth­er, to cre­ate a “dress­ing”.
  2. Place 2 chick­en breasts in crock and cov­er with 1/3 of “dress­ing” and 1/3 of parme­san. Next, place the oth­er two breasts in crock. Sprin­kle with 1/3 of cheese.
  3. Add car­rots, 1/3 of dress­ing, and then top the mix­ture with pota­toes. Final­ly, add last por­tion of dress­ing and cheese.
  4. Cov­er and crock on LOW for 6 hours, or on HIGH for 3–4 hours, or until pota­toes are desired soft­ness.

One of our fam­i­ly favorites is Stew Meat. Place 1 Lb. or more, (depends on your fam­i­ly size.) in a greased crock pot. Add 1 can cream of mush­room soup and 1 can of Cream of Cel­ery Soup. Rinse cans with a lit­tle water. Stir to mix, and put the lid on. Do not add salt or sea­son­ings. This will make it’s own gravy. If it’s get­ting a lit­tle thick towards the end, add a lit­tle milk or water. Cooks on high for 3–4 hrs., or until meat is ten­der. Serve over baked pota­toes, rice, noo­dles, or bread. Del­ish.


This looks del­ish! Do I see onion and drum­sticks in the pho­to though? Can those be added?


I heard this recipe was deli­cious but I thought cheese was not Paleo? What can I add instead of Parme­san?
