Slow Cooker Chicken and Vegetables

Ingredients

4 or 5 chick­en breasts
32 oz. chick­en broth
1/2 large yel­low onion (or one small)
4 or 5 stalks cel­ery
8 – 10 red pota­toes
6 – 8 car­rots
3 gar­lic cloves
salt and pep­per

Slow Cook­er Chick­en and Veg­eta­bles is a great meal for any sea­son, and so easy to pre­pare. Bet­ter yet very healthy!

  1. Cut chick­en breast into three small­er pieces.
  2. Slice onion and cel­ery into small thin pieces.
  3. Trans­fer onion, cel­ery, gar­lic cloves, and broth into slow cook­er.
  4. Place chick­en on top of onion, cel­ery, gar­lic cloves and broth in the slow cook­er.
  5. Top­ping with bite-size chunks of car­rots and pota­toes.
  6. Salt and pep­per, then stir.
  7. Cov­er. Cook on High for 6–8 hours or until veg­eta­bles are ten­der.

Good and savory. I added a total of 5 gar­lic cloves and a shake or two of herbs de provence. also used 2 parsnips and 4 car­rots and only three large red pota­toes, and 3 large chick­en breasts. good for the four of us — 2 adults and 2 kids, and a lit­tle for lunch for me the next day.
It’s a lot of left over juice. and my boys (7 and near­ly 10) liked it well enough.

Made this for the first time and fol­lowed direc­tions. Was very bland, even sea­soned the chick­en breasts before­hand with salt and pep­per. End­ed up turn­ing recipe into Chick­en Veg­etable Soup by pulling apart the cooked chick­en breasts after 6.5hrs and added a few chick­en bouil­lon cubes to exist­ing broth. Sim­mered on high with the veg­eta­bles for anoth­er hour and a half- very tasty and per­fect meal on a cold, snowy New Eng­land day.
