Ingredients

1 c. sugar
1/4 c. flour
1/4 tsp. salt
1/4 c. lemon juice
1 T. grated lemon zest
3 eggs, separated
1 T. butter, melted
1 c. milk

Slow Cooker Baked Lemon Cake is delicious and very moist. I love the light and airy taste of this delicious cake.

  1. Combine sugar in a bowl, with flour and salt.
  2. Stir in lemon juice, lemon zest, egg yolks, butter and milk.
  3. In a seperaer bowl, beat egg whites until stiff peaks form, and fold gently into lemon mixture.
  4. Butter and flour a bowl that will fit in you slow cooker.
  5. Pour into bowl and cover tightly with foil (use a rubber band that will hold the foil tight).
  6. Place the bowl in your slow cooker and pour enough water to come 1 inch up sides of bowl.
  7. Cover. Cook on High for 3 to 4 hours or until topping is set and light and fluffy.
  8. Icing cake before serving or dust with powdered sugar (as pictured).

Just a question…what kind of bowl do you suggest? I’m not sure how deep of a bowl I need. My slow cooker is oval, btw, so I’m trying to figure this out. My mother LOVES lemon and would probably LOVE this. Thank you!

Michelle, thanks for asking….I was trying to figure out the same thing as I have never done this before with my crockpot. I was trying to google the answer with NO luck. Loaf pan….awesome.

Hi. What measurement does 1 T stand for? Do you mean 1 tablespoon?

Does the recipe call for all-purpose flour or self-rising flour?

Does it matter if you use a glass or metal baking pan/bowl for the cake? I have both but generally prefer glass…

Well I have an oval normal size crockpot, I think. And I have bread pans, normal size and it doesn’t even come close to fitting in my crockpot.

I would love to try this but I can’t believe it only takes 1/4 c. of flour? Is that correct? Thanks!

I would love to bake this in the oven. Do you know how long and what temp I would do it for?

I’ve tried this recipe twice now and it hasn’t come out either time. The first time I think I measured the ingredients wrong and it came out uncooked after 4.5 hours on high. The next time I followed the directions to the T, but it was still soupy after 4.5 hours. I’m using a glass bowl as my loaf pan doesn’t fit in the Crockpot. What am I doing wrong?
