Need din­ner ideas for this week? Here’s what’s on my din­ner menu! One of the great things about using a slow cook­er is I usu­al­ly have left­overs! I almost always eat left­overs for lunch the next day. 🙂

MONDAY:
Egg­plant Parme­san + fresh pas­ta with mixed green sal­ad

TUESDAY: (St. Paddy’s Day!)
Slow Cook­er Corned Beef & Cab­bage

WEDNESDAY:
Chick­en Tor­tilla Soup

THURSDAY:
Grilled Ham­burg­ers & Slow Cook­er Roast­ed Veg­gies
*Note: The left­over roast­ed veg­gies are per­fect to throw in an omelet!

FRIDAY:
Slow Cook­er Maple Salmon & jas­mine rice with a side of broc­coli
Note: Refrig­er­ate left­over salmon and then crum­ble (cold) over top mixed greens for a deli­cious sal­ad. I like to add edamame beans, sliv­ered almonds and top with a gin­ger sal­ad dress­ing!
